let there be cheese...
tonight, i made cheese. from scratch. well, technically, from a gallon of milk, a quarter of a rennet tablet, and two teaspoons of citric acid. but still...here's what it looked like when i finished:
it was mozzarella, specificially. and i did it for no particularly good reason, except to be able to say that i can make cheese.
